Both the immune system and mental health, among other systems, rely on a balance of good microorganisms in the gut. Fermented foods are found in the refrigerator section to preserve the beneficial organisms and include sauerkraut, kimchi, pickles, kvass, kombucha, kefir, and many others. Many people are making their own and it's a great, easy project. I just started making my own sauerkraut and I love it; it's a simple process, delicious, and so much cheaper than buying it. I eat sauerkraut and avocado as a condiment on pretty much every meal!

Sandor is kind of the rock star of fermentation with a fabulous crazy beard/sideburn look to fit the bill.
