Fermented foods!!

LOVE seeing this great article on the benefits of fermented foods in our local paper, The Seattle Times. http://seattletimes.com/html/pacificnw/2023282398_0420fitforlifexml.html  Fermented foods contain organisms that benefit the gut and therefore benefit the whole body. Both the immune system and mental health, among other systems, rely on a balance of good microorganisms in the gut. Fermented foods are found in the refrigerator section to preserve the beneficial organisms and include sauerkraut, kimchi, pickles, kvass, kombucha, kefir, and many others. Many people are making their own and it's a great, easy project. I just started making my own sauerkraut and I love it; it's a simple process, delicious, and so much cheaper than buying it. I eat sauerkraut and avocado as a condiment on pretty much every meal!

If you really want to dig and learn about fermentation and the amazing benefits of fermented foods, check out Sandor Katz's book 'The Art of Fermentation'. Sandor is kind of the rock star of fermentation with a fabulous crazy beard/sideburn look to fit the bill. There is a wealth of information on his website as well, www.wildfermentation.com, including the sauerkraut recipe I used to get started. Happy fermenting!!
